I think the hardest part about trying to lose weight and be healthier, is that you often crave foods that you know aren’t the most healthy. I love Chinese food but I know it can be moreish. One of the things I love is fried rice, and if you add the right chicken it can be an absolutely amazing easy dinner idea.

My kids love rice but I always make too much! This is a great way to use that leftover rice before it goes bad. My boys actually ate this even though they don’t like to “mix” their foods.

 

 

 

Healthier Chicken Fried Rice

 

Ingredients

  • 1 1/2 to 2 pounds of chicken breast
  • 1 tablespoon garlic powder
  • 2 tablespoon soy sauce
  • 2 tablespoon olive oil
  • 300 grams frozen mixed veggies, I used carrots, peas, corn and green beans
  • 6 eggs, whites only
  • 3 eggs, the whole egg
  • 750 grams of day old cooked rice
  • 3 tablespoons soy sauce
  • 3 tablespoons toasted sesame oil

 

 

 

Healthier Chicken Fried Rice

 

Directions

  1. Put the chicken in a bowl with the garlic powder, 2 tablespoon soy sauce and 1 tablespoon olive oil. Make sure all the chicken is coated, allow to marinate for 15 to 20 minutes.
  2. Heat the grill to Medium-High heat, grill your chicken breast until it reaches 165 degrees Fahrenheit. Let the chicken rest.
  3. Then in a large pan on Medium heat, put in 1 tablespoon of olive oil and coat the pan. Dump in your frozen veggies and allow them to defrost.
  4. Whisk together the eggs and egg whites. Push the veggies to one side of the pan and dump in your eggs. Stir until the eggs  and veggies are cooked through.
  5. Once it’s all cooked through add in your rice and allow to warm up. While the rice is warming up. Chopped up your chicken into bite sized pieces and add to the pan. 
  6. Stir all together and then top with 3 tablespoons soy sauce and 3 tablespoons toasted sesame oil.This makes about 5 servings and is around 550 calories per serving.
  7. Enjoy warm!

I didn’t know how this recipe would go over with my husband and daughter because we have never been zucchini eaters but this was so good! We will be eating keto chicken alfredo even when the fitness journey is over!

 

I absolutely love alfredo sauce and matter of fact that is the only thing I get at Olive Garden. Imagine my surprise when I find an alfredo sauce that I like even more than my old standby! If you don’t love zucchini you will be surprised how much you do in this dish! There is love in the air!
