When my kids were little, I loved to make chicken pillows! It felt so fancy but probably one of the easiest recipes to make. I love recipes that take only minutes to make and taste like you have been slaving away in the kitchen.

This is a fun variation of that recipe. The flavors are so good that not only can you serve it for family dinner but would be a great party, tailgating or even a bridal shower delight.

 

 

TIPS AND TRICKS

 

BISCUITS: I used the Pillsbury Grands. It doesn’t matter what variation you use. They will all work. 

PROTEIN: I used a rotisserie chicken but if you have chicken breasts on hand, cook them up! You can also use turkey to mix it up!

CREAM CHEESE: If you are trying to lighten it up a little, use the low fat version.

FREEZE OR NOT TO FREEZE: You can freeze the biscuits, once they are cool from baking. Place them in an airtight container and they should be good up to 3 months. You can also put leftovers in an airtight container and store them in the fridge for up to 3 days.

Ingredients

  • 1½ cups cooked chopped chicken
  • 1/4 cup green peppers, diced
  • 1/2 cup onion, diced
  • 1 to 2 stalks celery, diced
  • 1 packet dried ranch dressing
  • 6 ounces whipped cream cheese
  • 1¼ cups shredded cheddar cheese, divided
  • 2 (6-oz) cans refrigerated biscuits (10 biscuits total)
  • optional: a pinch of red pepper flakes, if you want a little kick

Instructions

  1. Preheat oven to 350º degrees. Spray a regular muffin pan with nonstick cooking spray.

  2. In a large bowl, stir together cooked chicken, onion, green pepper, celery, dry ranch dressing, and 1 cup shredded cheddar cheese.

  3. Open the cans of refrigerated biscuits. Separate biscuit dough into 10 biscuits. Using a rolling pin, roll each biscuit into a large circle. Firmly press dough in the bottom and up the side of each muffin cup.

  4. Spoon the chicken mixture into the biscuit cups. Top each biscuit with the remaining ¼ cup of grated cheese.

  5. Bake in a preheated oven for 17 to 20 minutes, until the biscuits are golden brown. Sprinkle with parsley.
