I swear when the first leaf falls this time of year, all I can think about is soup!  On Sunday, was my birthday dinner and when I was asked by my family what I wanted… guessed it, soup!

It tastes amazing any time of year but for some reason, it fits perfectly with Fall! It doesn’t hurt that it only takes minutes to make, one pan, and only 30 minutes! It’s a mom’s dream!

HOW LONG DOES IT LAST IN THE FRIDGE? Store it in an airtight container and it should keep up to 4 to 5 days.

CAN I FREEZE IT? Yes! Please make sure it is completely cool before pouring it in an airtight container or freezer bags. It should keep up to 3 months.

GARNISHES: A dab of your favorite pesto sauce can bring out the flavors. Sprinkle a little extra Parmesan cheese,  a dollop of sour cream, or crackers.

CREAM? If you don’t want to use heavy cream, you can substitute it for almond milk, coconut milk or even a little more chicken broth.
